Soaked Pumpkin Pie Oatmeal (In Cute, Festive & Kid-Friendly Shapes)

For oatmeal
  1. Place oats, water and apple cider vinegar in a large bowl. Mix well and cover for at least 12 hours (24 is best)
  2. Once the oats are done soaking, in a separate bowl add eggs, coconut oil and maple syrup and beat until all are combined
  3. Add in pumpkin pie spice, vanilla, sea salt and baking powder. Mix really well (you could use a hand mixer if easier)
  4. Stir in pumpkin puree and mix until everything is combined
  5. Pour into a glass baking dish
  6. Bake at 350 degrees for 35-45 minutes
  7. Once cooled, take desired cutters and "cut out" the shapes and put into individual containers
To make faces:
  1. Make a cocoa paste by putting a tablespoon of cocoa powder and ½ tablespoon water. Mix together until it forms a semi-thick paste. Use a toothpick to make faces.
Notes
To make this ahead of time: Follow steps 1-5 (do this the night before you plan to bake the oatmeal). Place a cover on glass baking dish and set in the refrigerator. In the morning, just set the temperature and place pre-mixed oatmeal in the oven to bake!
