Homemade Pancake Mix

School morning breakfast doesn’t need to be boring and filled with sugary cereal.

Although we love to eat fresh eggs from our backyard flock of chickens, eggs can get a bit boring — especially for the little ones. One option would be waffles made ahead of time (frozen already) and popping into the toaster to heat up. If you’re looking for something a little “lighter,” pancakes make a great alternative but can be a bit of a pain to make.

Instead of reaching for the store-bought baking mixes with the partially hydrogenated cottonseed oil, enriched flour, and dextrose, you can reach for my homemade pancake mix made with simple, real ingredients.

Seriously, this mix is incredibly easy to whip up and even easier to actually make.

And the taste? Let’s just say these pancakes are so good that I actually made pancakes three days in a row and ate them for lunch, too.

P.S. For extra fast pancake breakfast mornings, I highly suggest investing in a griddle. Just until recently, I despised making pancakes in my one pan because it took FOREVER.   1. Griddle cakes were always in the morning makings, along with our cage-free chickens eggs with orange healthy looking centers. Sausage from my pig and his bacon (sigh) sizzles right along on the griddle. Yummmy…
